The combination of tofu and flaxseed oil surprisingly tastes like a poached egg.
- 2 slices bread
- 1 to 2 tablespoons flaxseed oil
- 1 tablespoon vegan margarine
- Two ¼-inch slices firm tofu
- Salt and freshly ground black pepper to taste
Toast the bread in a toaster. Spread flaxseed oil lavishly on the toast, then “butter” the toast
lightly with margarine. Place 1 slice of tofu on each slice of toast, drizzle a few drops of flaxseed
oil over the tofu, and sprinkle with salt and pepper to taste.
